In honor of Earth Day (April 22), here’s a wine from Halter Ranch and its 200-acre, organically farmed vineyard in the Adelaida District on the west side of Paso Robles.

   The stunning property – which encompasses a total of 2,700 acres, most of which has been left to the natural landscape – was developed by Hansjörg Wyss, whose Wyss Foundation supports projects in areas from conservation to education to social justice. Twenty grape varieties are cultivated on the estate’s rolling hillsides.

   The CDP blend is a nod to Châteauneuf-du-Pape and is composed of 70 percent grenache, 15 percent syrah, 13 percent mourvèdre and 2 percent tannat. The wine is structured and savory, with notes of white pepper, roasted meat and wild herbs, along with its lively dark berry. It’s full-bodied and ripe, yet has a lovely freshness. It retails for $55.
